How can maggots appear so fast?

I just noticed maggots in clear view on my kitchen floor that weren't there a week ago, when I went out of town. How do they appear so fast, and would it have anything to do with the many fruit trees I have on my property? This is the first time I have ever seen them and it disgusts me so much I don't want to eat. How do I prevent this from ever happening again?
